I made the crockpot potato soup again and followed my recipe. I did add a bit of ham we had in the fridge because some of the bacon I’d cooked the day before had disappeared.
This soup is really, really good. It makes a full oval crockpot’s worth. We delivered soup to Grandma & Grandpa and our neighbor and had a house full to feed, so next time I’ll half it if I’m making it just for the two of us.
This would be a great garden-work-party dish — throw everything in and then you have a hearty meal to feed lots of people when it’s time to eat. Make a toppings bar (anything you’d put on baked potatoes) so everyone can flavor their soup. Maybe some sausage crumbles or chopped up ham for extra protein.

However you want to do it – just go ahead and do it. It’s really good and really easy.
