A dressing to remember … and make again

With the holidays coming, I’ve been looking at recipes (let’s be honest, Pinterest), and I stumbled upon this beauty that we made last summer — a creamy feta vinaigrette — it was amazing. We made it during that time of year when there’s fresh lettuce and the herbs are growing strong, but everything else is goodness from the local market. Our co-op has a beautiful feta cheese that is mild and just sings in this dressing.

Hmm, I’m not sure how it would live with apples and pears and beets, but I think it would be worth a try. Definitely worth a try.

Also on deck for Thanksgiving, sweet potatoes and green bean casserole. I keep finding amazing desserts — and since I have very recently discovered how much fun it is to make homemade doughnuts, I may need to make a batch of old fashioned pumpkin doughnuts during the long weekend. There should be plenty of people to help eat those.
