We went to our greyhound buddies’ house tonight for dinner. Such lovely ladies, such sweet greyhounds, such amazing food. They made us a stuffed pork tenderloin with broccoli salad and extra stuffing – Oh My, the Stuffing! One of the sister’s makes the most amazing guacamole, and although it may not appear to go with this particular meal, I will never turn down a helping of her guac. The other sister was a bartender and makes the most amazing drinks. And their ninety-plus year old mother is quite the kick of a conversationalist. And then there’s The Gentleman, who I am continually reminded of how much I adore being with him no matter the setting. I am a blessed woman and am continually reminded by the amazing people who surround me.
For this particular gathering, we were in charge of dessert.
So, I whipped up a batch of Irish coffee pudding – lovely, simple, easy dessert. Absolutely worth the trip to the liquor store for Irish whiskey.
